Brix Restaurant & Wine Bar in Flagstaff, Arizona serves seasonal menus of farm-focused contemporary American cuisine. Their spring dinner menu features Grilled Pork Loin Spiedini, created with loins and guanciale from Heritage Foods USA pigs. 

Executive Chef David Smith says:

“In the past we have used tenderloin, bone-in rack, loin, and boston butt. We had a long love affair with pork belly over the last fall and winter menus. Right now we are using jowl for guanciale with brined and marinated skewers of Canadian loin in a dish called “Grilled Pork Loin Spiedini, Heritage Foods Berkshire Pork, Ivory Lentils, Haricot Verts, Guanciale, Lolla Rosa, Pecan & Black Currant Chutney” on our spring menu. 

At Brix we source the majority of our produce from local organic farms, all of our seafood comes from sustainable populations, and all of our meats are from small sustainable farms. We proudly display a list of all of our farms in the restaurant, so that our patrons can understand how their meal got to the table. Heritage Foods USA has been on those lists for three years now, we thank them for their wonderful contribution to our mission and we look forward to more great pork!”
