Haggis is the Scottish national dish. Scottish native Ian McAndrew makes this Haggis at his market in Brick, New Jersey.
Haggis is historically made with sheep’s “pluck” (heart, liver and lungs) and boiled in the animal’s stomach for an hour. Today haggis is made with beef shoulder and liver, oatmeal, salt, white pepper, onions, cloves, and beef suet (a hard white fat found on the kidneys and loins of sheep and cattle).
To prepare just thaw and boil for 30-45 minutes as its already cooked. This very rich Scottish food can be treated as a paté and spread over toast or served alongside hearty vegetables or potatoes.
Haggis is traditionally eaten in the winter months and to honor the poet Roberts Burns’ birthday on January 25th.
