To defrost quickly:
Run cold water over the wrapped turkey breast and keep submerged in cold water until thawed, about three hours.  To defrost in the refrigerator allow five hours per pound.
 
To prepare:

• Set oven to 325°F.    
• Rinse breast well and pat dry.  Rub breast with butter and season.
• Place the breast on a rack in a large roasting pan, add 1½ cups water and cook uncovered for 15 to 20 minutes per pound, basting often.  
• Breast is done when juices run clear (internal temperature on meat thermometer should read about 160°F).
