Back before refrigeration, the brisket was one of the last cuts eaten from the fall slaughter from the year before, one of the last protein resorts to get people through a long winter. Its location on the very fatty breast area of the cow made itself an excellent candidate to preserve, especially in the form of corned beef. A myriad of festivals and banquets dedicated to celebrating the survival of winter made this a centerpiece of holidays throughout history.

Beef Brisket Cure for PJ Clarke’s Famous
Corned Beef

12 lbs Fresh Beef Brisket
2 gallons Water
4 Cups Kosher Salt
2 Cups Granulated Sugar
6 Garlic Cloves
¼ Cup Cloves
2 Cups Whole Peppercorns
1 Cups Whole Coriander
4 Bay Leaves
1 Tablespoon Saltpeter
2 Quarts Ice
Chicken stock
2 Tablespoons standard pickling spice
Bring Water to a simmer and add all dry ingredients
Shut off heat and stir until salt and sugar is dissolved
Trim brisket of any excess fat that is not desirable (leave some fat on for curing process)
Pour Ice into warm water to chill
Add remaining ingredients
Insert brisket into brine, and keep submerged.
Refrigerate for up to 12 days rotating the brisket once a day, but making sure it stays submerged
When ready to cook, rinse well before cooking
Bring chicken stock to a simmer and add 2 Tablespoons of a standard pickling spice
Simmer brisket until tender, approx 4 hours

Slice and serve or use where desired.
