Dear Heritage Foods USA Supporter,
We hope everyone had a wonderful Memorial Day weekend! This week, we are excited to feature a couple Heritage classics.
First, we have secured a limited number of American and American Chinchilla rabbits from our friends at the Rare Hare Barn in Leon, Kansas. These rabbits are delivered fresh, and, if ordered today, you will receive them by Friday!
Through their attentiveness and dedication, Eric and Callene owners of the Rare Hare Barn, raise rabbits that are delicately flavored and unbelievably tender. Humanely raised and naturally fed, the meat of these rabbits is low in calories and high in protein, making it one of the most nutritious meats on the market.
Two Fresh Rare Breed Heritage Rabbits (about 5 lbs)
Overnight Shipping Included - $121 – Receive this Friday!
Next up, we are offering one of our most popular cuts, the Boneless Boston Butt, from the rare Red Wattle pig. Orders placed today are delivered fresh by this Friday!
Red Wattle is delicious. Its meat is charmingly inconsistent, often earthy, vegetal, and herbaceous. This porky flavor is, however, always concentrated, edgy, and racy. Due to the rise of commodity pork, today the Red Wattle is considered critically endangered, and eating ours is one of the best ways to preserving diversity in the livestock supply!
Fresh Red Wattle Boneless Boston Butt (about 7.5 lbs)
Shipping Included - $82 - Receive this Friday!
As many of you know, this past month Heritage Foods USA teamed up with Brian Kenny and the Hearst Ranch to offer our first Cattle Share. We would like to take this opportunity to extend a special thanks to Brian, the Hearst Ranch, and all of our friends and customers that supported this venture. In the end, we sold 108 orders to you, our mail order customers – thank you so so much! Our professional chefs pulled through too. Thank you to Ottomanelli’s Butcher Shop, Del Posto, Becco, Gramercy Tavern, Union Square Café, Minetta Tavern, CraftSteak, Momofuko Ssam Bar, Cesca, Il Buco, Bar Boulud, Robertas, Vinegar Hill House, Caseus, Hotel Vitale, Chez Panisse, Bi Rite Market, A16, Café Rouge, Rennaisance Boston Waterfront Hotel, and Atlanta 4 Seasons Park 75. The success of this first venture has no doubt confirmed our belief that this model is a valuable one for small beef producers across America.
If you are looking for exciting ways to cook all of your great Heritage meat, check out our friend Peter Kaminsky’s new book, Seven Fires: Grilling the Argentine Way, in which he and famed Argentinean chef Francis Mallmann explore the art of wood fire grilling. Use their book and some delicious Heritage pork or beef for your next outdoor cookout!
Stay tuned to next week’s newsletter for fresh pork combination packages and other gift ideas for Father’s Day, Sunday June 21st! Also, stay tuned for news about the Heritage Radio Network at the bottom of our weekly emails.
